INGREDIENTS
190 g unbleached flour
60 g whole wheat flour
100 g raw sugar
1 tsp baking soda
1 tsp baking powder
1/2 tsp sea salt
1 tsp ground cinnamon
80 ml sunflower oil
2 tsp vanilla
50 g vanilla yogurt
2 eggs
350 g bananas, mashed (about 3-4 medium)
100 g walnuts, chopped
DIRECTIONS
Heat oven to 150°C. Lightly greased a 9x5x3 inch loaf pan with cooking spray.
In a bowl, mix the flour, baking soda, baking powder, salt and cinnamon and set aside. In a large bowl, combine the oil, vanilla, yogurt and eggs; mix well. Add in bananas. Gradually add the dry ingredients and stir until combined. Fold in walnuts.
Pour batter into the greased pan and bake for 25 to 30 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans to wire racks.

Recipe makes 12 servings.
