Blueberry Banana Bread

This bread is rich with antioxidants, nutty fiber and sweet banana flavor. Great for breakfast.

INGREDIENTS
250 g all-purpose flour
1 tsp baking soda
1/2 tsp salt
100 g margarine
200 g raw sugar
2 eggs
2 medium bananas, mashed
145 g fresh blueberries
100 g almond, chopped

DIRECTIONS
In a bowl, combine the flour, baking soda and salt and set aside. In a large bowl, combine the margarine, sugar and egg; mix well. Add in bananas. Gradually add the dry ingredients and stir until combined. Fold in blueberries and almond.

Pour batter into a greased 9x5x3 inch loaf pan. Bake at 170ÂșC for 30 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans to wire racks.

Recipe makes 10 servings.
